‘Tis The Season: Dark Chocolate Peppermint Truffles {Vegan}

Yesterday after the race, I kept checking on Active.com to see if the results were posted. I wanted to know my official time and place. I was pretty excited when I saw I was spot on for my time… 23.03 and 9th in my age group.

After yesterday’s success I made the executive decision that Dan and I deserved something sweet and decadent.

Vegan Dark Chocolate Peppermint Truffles
Chocolate and peppermint remind me of Christmas like pumpkin pie does Thanksgiving. And considering that we were surrounded by Santa, reindeers, and snow yesterday I was feeling the Christmas spirit… a lot.
These truffles came out perfectly. Just 1 is plenty to get a sweet fix as a snack or dessert, or part of lunch, or any time in between.
Plus, plus they only have 4 ingredients, you can’t mess up. If you do, then I guess it’s just up to you to lick the bowl and the messed up treats.
I love making truffles for gifts because they look so much more complicated than they really are. Toss a few in a pretty box, buy a great red wine and you have a complete gift for a friend of co-worker.
Ingredients:
- 3/4 cup dark chocolate (70-72% dark)
- 4 tbsp unsweetened almond milk
- 1/4 tsp peppermint extract
- Coconut shavings or coco powder for coating
Directions:
- Put the first 3 ingredients in a microwave safe bowl. Heat for 20 minutes, stir and heat in increments of 13 seconds until everything is melted.
- Place in the freezer for 15-20 minutes to harden. From here, use your hands and a spoon to scoop out, mold into bowls and roll in desired coating.
- Place in the freezer for 5 more minutes to “set”.
That’s it! No baking, just melt, freeze, roll, freeze.

After I spent some quality time in the kitchen I set out to finish getting the house in order for the holidays. The mantel is done, the lights are outside and the house is ready for my in-laws who are coming down this week.
And we finally have something under our tree:

For me, I always make biscotti and pair it with a pretty mug and my favorite coffees to give out. My mom makes my grandfather’s fudge every year… holy wow it’s amazing!
