Breakfast Prep: Mason Jar Blueberry Banana Oatmeal Parfaits {Gluten-Free}

I love breakfast. So much that I go to bed excited to wake up and eat. Lunch is just okay, and dinner is good but breakfast… fabulous.

And whatever I can do to speed up the prep so I can sit down and enjoy it sooner, is amazing. After all, I wake up at 5:00am already, I really don’t want to wake up earlier just to make a great breakfast. With a prepped meal, I could technically sleep in a few extra minutes (I should, but I don’t).

So instead, I enjoy having a few extra minutes to cherish my meal before racing out the door.

Did you know that you can bake mason jars?

Well, you can! And that allows for the best meal prep… it’s a bake, and eat and save all in one. Perfect.

These baked oatmeal jars remind me of a delicious cobbler, minus the sugar, of course.

Make 3 and you have enough for 6 breakfasts! Each jar is 2 servings, but I promise, it’s easy to tell what a single serving is.

Mason Jar Gluten-Free Blueberry Banana Cobbler Oatmeal Parfaits

This particular recipe makes 2 mason jars. As for size, I used 2 cup mason jars with the wide mouth. Of course you can use the pint size for single servings!

Ingredients:

2 Cups Oats (I use gluten-free organic)

1/2 Tsp Cinnamon

1/4 Tsp Ginger, ground

4 Tsp Coconut Oil

1/2-1 Tsp Stevia

1 Cup Blueberries (or more if desired)

1 Banana

1 Cup Water

Honey (for drizzle

Directions

1. Preheat oven to 350-degrees

2. In a mixing bowl, lightly stir together berries, cinnamon, and ginger.

3. In a second bowl, mix stevia and oats.

4. Grab a jar, add a layer of sliced banana, add in 1/2 cup oats and 1/4 cup berries. Drizzle with 1/4 tsp honey. Repeat layers. Jar done! Do the same to the other.

5. Pour 1/2 cup of water in each one. Place the jars in a baking pan for balance and ease.

6. Bake for 30-40 minutes until slightly browned. Allow to cool on the counter before adding a lid and chilling.

For the second jar, I left the water out to see what would happen. It turned into a great granola that I used for a smoothie topper!

When you’re ready to eat, just eat through one layer of berries, oats and bananas! Easy Peasy!
