Paleo Grapefruit Poppy Seed Muffins & Sweet Scarlett’s Giveaway!

Normally, I try to keep my recipe sharing to just one per week, sometimes none. There are a tone of recipe developers out there and my thing is fitness so I try to stick to that side of the river. But this week, I’m breaking the rules and sharing a second recipe.

Let’s talk grapefruit for a minute, shall we? Just maybe you’ll learn something that makes you react with a, “wow, that’s pretty cool!”
Because, yes, there are some pretty cool things about grapefruit.
For instance…
Did you know that grapefruits are the only citrus fruits originally from America? It’s actually a cross between the pommel and orange? AND it received its name from Jamaicans because the fruit grows in bunches like grapes.
Just incase it’s every a Jeopardy question, now you know (and knowing is half the battle).
The Perks Of Grapefruit
While that’s a fun fact, let’s dig a bit deeper into the reasons why it’s cool to eat this sweetly tart fruit.
- A half of a grapefruit has 6 grams of fiber, making it one of the highest fiber fruits available.
- One grapefruit contains enough Vitamin C for your body for 2 days!
- It contains 75% juice, with the ability to squeeze out an entire cup of fresh juice. When squeezed and stored in the fridge, the juice can retain 98% of it’s Vitamin C for up to a week! This is rare for most juices which quickly lose their nutritious profile.
- As for weight loss, a study showed that rats that drank no-pulp grapefruit juice with a high fat diet, gained 18% LESS weight than the rats without juice. They also had better insulin and blood sugar levels. There actually may be something to the whole “grapefruit diet” thing. (Read the study here)
- And finally, a grapefruit a day may have a significant affect on lowering cholesterol levels. At least according to this study! While it’s not clear exactly why, it’s likely due to the high levels of antioxidants found in the red variety.
But I’m pretty sure you don’t need this bullet points to convince you to slice open a grapefruit from time to time. We all know it’s healthy and we’ve all heard that it can help our waist lines.

Texas Sweet Scarletts
A few weeks ago the grapefruit company Sweet Scarletts reached out to me asking if I would like to try their Texas variety. Of course I jumped at the opportunity! In Charleston, I’ve only ever seen Florida SunKisks available.
I received the sweetest gift basket of grapefruits, a hand juicer (which works like a charm), adorable apron, juice jar, and my favorite… a grapefruit spoon!
I’ve always wanted a grapefruit spoon but it’s not one of those things you think to buy when you’re out and about, you know?
I couldn’t wait to try the fruit and was really surprised by the different taste. It was sweeter than any grapefruit I’ve had before. Normally, I like to sprinkle a little stevia on top, but these babies didn’t need it. Even the juice tasted as if had been sweetened. Delicious!

Paleo Grapefruit Poppy Seed Muffins
Recipes makes 6 big muffins!
- 1 Cup Almond Flour
- 1/4 + 1 Tbsp Coconut Flour
- 1/4 Tsp Salt
- 1/3 Cup Honey
- 1/2 Tsp Baking Soda
- 1/3 Cup Coconut Oil (melted)
- 2 Eggs
- 1/4 Cup Almond Milk
- 2 Tbsp Fresh Grapefruit Juice
- 2 Tbsp Grapefruit Zest
- 1 Tbsp Poppy Seeds
- Preheat the oven to 350-degrees.
- In a mixing bowl combine flours, salt, baking soda, zest and poppy seeds. In another bowl, combine the rest of the ingredients. Pour the dry in with the wet and mix until well blended.
- Evenly pour into 6 muffin molds.
- Bake at 350-degrees for 14-16 minutes until slightly browned. Remove from oven and allow to completely cool
*I also made a glaze made of 1 tbsp juice, 2 tbsp coconut sugar and 1 tbsp coconut oil that I poured on top of the muffins once cooled. It was great, but not necessary.
