Yesterday’s baking extravaganza was filled with successes, failures and new creations! This being one of the new creations! I have to be honest… It was an accident.

I originally set out to make vegan Christmas cookies.

The dough seemed perfect, the trays were lined with parchment and I after 10 minutes I was expecting to open the oven to see traditional cookies ready to come out.

Instead I saw these monster cookies.

Yup, I was pretty nervous. Dan even commented that they looked more like mini cakes or muffins… so instead of letting it be a failure… they became cuffins.

I served them as dessert last night along with a few other treats and everyone loved them.

Nervous for no reason.

Because I didn’t use a ton of sugar in the cookie dough, these are actually perfect for crumpets too. Not overly sweet, but perfect for the holidays!

I promise, Santa Clause won’t leave even a crumb behind if you leave these out on Christmas Eve.

Christmas Sugar Cuffins {Vegan}

Cookie Ingredients: 

  • 2 1/2 cups flour
  • 2 tsp baking powder
  • 14 packets stevia (or 1/2 cup + 2 tbsp sugar)
  • 1 cup almond milk
  • 1/2 tsp vanilla
  • 6.5 oz vegan cream cheese*

Icing Ingredients: 

  • 1 cup Confectioner’s sugar
  • 1/4 tsp vanilla
  • 1+ tbsp water

Directions: 

  1. Preheat oven to 350-degrees.
  2. In a large bowl blend together all cookie ingredients. If using cookie cutters, place dough in the fridge for 15+ minutes to allow to chill for easy handling.
  3. Remove from fridge, place some flour in your hands to remove stickiness and lightly dust cookie dough. Roll out dough to 1/4 inch thickness and cut out to desired shapes.
  4. Place on a parchment lined cookie tray that has been slightly sprinkled with flour. Each cookie should be 2 inches apart.
  5. Cook for 10-12 minutes until slightly golden.
  6. Remove from oven and allow to cool before decorating.

Icing: 

  1. In a mixing bowl combine sugar, water, and vanilla. Add water more water tsp by tsp until you get the desired icing consistency. If it starts to harden while using, simply add a splash more water.

I am wrapping each cookie up with a bag of my favorite holiday tea to give as gifts. It’s easy, delicious, and much better for you than the traditional sugar cookies. And because the icing is more of a glaze, you’ll use much less than traditional cookie icing.
