A Partner In Crime & A Killer Soup Recipe!

Good morning! I have some very big and exciting news which I am just dancing in my chair to share with you. But before I do, I have got to share a new soup recipe.

For the past few weeks I lost a bit of my cooking drive, I guess coming home at 9pm will do that to ya. But I am glad to announce that my passion is back and I have been going to down with my pots, pans, and blender.

When cold temps roll in and I am tired, there is nothing better than tossing together a big bowl of soup. And when I say tossing together, that’s exactly what I mean.

So without further ado, let me introduce you to:

{Vegan} Creamy Arugula Artichoke Soup

Give this soup a go the next time you want something delicious, heart warming, and comforting. Not to mention it was in my bowl in less than 10 minutes.

Ingredients: 

For The Soup: 

2 garlic cloves

4 cups vegetable broth

8 oz artichoke hearts (drained)

1/2 cup cashews, unsalted

2 tbsp lemon juice

2 cups arugula

Pinch of sea salt

Dash of pepper

For The Pan Sauté: 

1 tsp extra virgin olive oil

1 can rinsed chickpeas

1/2 cup onion, sliced

1 cup arugula

1/3 cup artichokes, chopped (I used canned, rinsed)

Directions: 

1. Heat up a small skillet with a drizzle of oil and toss in chickpeas and sliced onions, sautee for 1-2 minutes until onions become softened. Add in 1 cup (loosely packed) arugula and 1/3 cup chopped artichokes… sautee until arugula is wilted (takes all of 5 minutes max)… simultaneously move on to the next step while those are cooking.

2. In a blender, add ALL the other ingredients and blend until smooth. If you are using a Vitamix (or other strong blender) simply set it on “soup” and let it to do it’s thing until its piping hot… then it’s done! If not, no biggie: pour the soup into a pot and bring to a low boil.

3. Once it’s heated through, stir in the onions and chickpeas.

4. Pour into your bowls and garnish if you would like with few arugula leaves.

Both Dan and I loved this soup and by the end of dinner there wasn’t a single drop left. Seriously, give this a go! Like tonight!

Other good garnishes would include olives, chopped cashews, and of course artichoke hearts.

Not Vegan? 

If you’re not vegan, Dan suggests to add some chicken. I promised him the next time I would do this, I would cook up some chicken just for his bowl! A sprinkle of Parmesan cheese would be excellent as well.

Big News: 2 Wedding Gowns To Destroy

Remember when I did the Charleston Half Marathon last month? I mentioned that during the race I met a local blogger and fellow FitFluential Ambassador, Erica of Itzy’s Kitchen.

Even with my poor photogenic abilities, we have stayed in touch since the race and just yesterday she contacted me regarding my Wedding Dress Paint Run for Special Olympics.

Anyways, Erica asked if she could do it with me!

With the two of us doing this event together, I am hoping to not only hit the $ 1,000 goal but to go beyond it. Plus, let’s face it… two is better than one.

I am so grateful to Erica for stepping up to do this with me, and I know we will be able to get the word out for this great cause with teamwork.
