A Manly Man’s Oatmeal Recipe (That Women Will Love Too)

Happy Sunday! You know Sunday is my favorite morning of the week! Of course it started off with a big ole’ pumpkin pancake and a dollop of Justin’s peanut butter (I meant to grab the almond butter but grabbed the pb by accident).
It was delicious, the perfect way to start a dreary, winter-looking day.
While I love sweet breakfasts like pancakes, Dan is the opposite. He loves hearty meals filled with eggs, toast, and veggies. When we make breakfast at the same time, he has his side of the kitchen and I have mine, that way we don’t contaminate. No onions in my pancakes and no syrup in his egg sandwich.
He generally has two go to morning meals that he alternates between:
- Egg sandwich
And then there is his
- Manly man’s hearty oatmeal.
The “Eggwich” he has shared before, but the oatmeal is something new that we came up with together when he started to get a bit bored of his eggwich.
If you’re not really into the classic oatmeal topped with fruit, nuts and brown sugar, don’t give up on oatmeal yet. Try this, you might be surprised!
Manly Man’s Hearty Vegetable Oatmeal
What you need:
- 1 tbsp onion, diced
- 3 brussel sprouts, sliced and chopped (or other green)
- 1 tbsp bell pepper, chopped
- 3 olives, sliced
- 1/2 tsp garlic powder
- 1 tsp fresh parsley, chopped (or 1/2 tsp dried)
- 1/2 cup oats
- 1 cup water (or milk)
- 1 tsp olive oil
What you do:
- Heat up the oil in a skillet on med heat. Add in all veggies, except olives and parsley.
- Sauté until softened.
- While veggies are cooking, heat up water in a small pot and bring to a boil. Add oats, and stir regularly until water is absorbed and oats are fluffy.
- Pour oats into a bowl, pour veggies on top and stir together. Add in olives and parsley and sprinkle a bit of pepper on top.
Seriously, this is so good, and it makes our house smell amazing each morning.
If you want to add even more heartiness to it, add an egg into the oats while they are cooking. Instead of “fried rice” you’ll end up with “fried oats”. This is how I would personally do mine.
How can you resist those veggies?
As of for the rest of the weekend, it’s not much different from this. I have spend over half of the weekend in my kitchen testing out Thanksgiving recipes. It’s been a blast, and I have had the opportunity to have some great taste testing help.
So far the Thanksgiving successes include:
- Vegan carrot gingerbread
- Vegan sourdough stuffing
- Vegan Cranberry sauce
And the final thing that I am waiting to come out of the oven right now is a new twist on my favorite:
- Vegan sweet potato casserole.
We did manage to go to Twilight today. I have been pretty excited about this particular one because it brings the movies to an end. I had to see how they were able to depict events and characters from the book. Overall, it was great… of course Dan complained about it about 1/4 of the time but I reminded him again that at least it was the final Twilight movie he would have to see. That cheered him right up.
