Can’t Catch Me Gingerbread Man Protein Shake {Vegan}

Happy Friday!

I hope you have a ton of wonderful plans this weekend.

Our weekend is packed with dinners with friends and family and a half marathon. I know I said that I wasn’t going to run Kiawah and I am not racing it. I am simply pacing my friend Ashton while she races. So yea, I’m still sticking to my “not racing Kiawah” quote.

That is if I can wake up in the morning since we’re meeting friends out tonight. Can’t wait!

At least I’ll have this shake to energize me.

I mean how can I not run well with the help of the Gingerbread Man?

This this is delicious. And of course the cookie to dip into the shake… just takes a protein shake to a whole new level.

And yes, even the cookie is vegan!

I made homemade cookies to use, but you definitely don’t have to. There are some wonderful boxed gingerbread cookies out right now, so don’t let the cookie deter you from trying this! K?

Vegan Gingerbread Protein Shake

Ingredients:

1 Frozen Banana
1/4 Tsp Ground Ginger
1/4 Tsp Cinnamon
Pinch Nutmeg
1/2 Gingerbread Cookie
1 Scoop Vanilla Protein
1 Tsp Molasses
1 Cup Almond Milk

Directions:Add everything to a blender and blend until smooth.

As for the homemade cookies, they were extremely easy too.

Gluten-Free Vegan Gingerbread Men

Ingredients:

3/4 Cup Rice Flour
1/4 Cup Ground Flaxseed
1/4 Cup Millet Flour
1 Tsp Baking Soda
1 1/2 Tsp Ginger
1 Tsp Cinnamon
Pinch Nutmeg
4 Stevia Packets
3 Tsp Molasses
1 Cup Almond Milk
1/4 Cup Water
1/4 Tsp Vanilla

Directions:

1. Preheat oven to 350.
2. Mix together all the dry ingredients. Add in all the wet ingredients and mix evenly.
3. Allow dough to chill for 5-10 minutes in freezer. On a floured surface roll out and use a gingerbread cookie cutter for shapes.
4. Cook for 6-8 minutes or until slightly browned.
