Gala For A Cause & Vegan Brunch Recipes

Last I left off yesterday I was about to get ready for the Special Olympics Gala, which is a huge auction event. This is an annual event and with many of my boot camp clients involved, I thought it was a great way for Dan and I give some of our time and help out.

It was a blast! Of course anytime I get to peel off my fitness attire and slip into something a bit more “classy feminine” I get excited. The women volunteers were asked to wear a black dress and the guys had to clean up with black dress pants, white shirt and a tie.

It was awesome getting to be a part of something so special. This year was their biggest turn out in the history (which spans back around 13 years)! The drinks were flowing, the people were cheery and that made my job easy.

My job for the evening was to sell as many glow bracelets as I could. The bracelets sold for $ 10/each, and by getting one you had the opportunity to win a $ 250 gift card to Halls Chophouse (an awesome restaurant in downtown Charleston). After a few drinks were enjoyed by the guests, these things were flying out of my hand! It helped that I was partnered with an outgoing guy, Joe and the two of us turned it into a competition (go figure).

Dan was in charge of one of the silent auction tables. His job wasn’t quite as conversationally based as mine but he said he met some interested people and did a great job trying to convince them to bid on some golf gear!

Seriously, this event has so many auction goodies! I kept my credit card in the car so I wouldn’t be tempted. But from trips to Costa Rica, Paddle Boards, jewelry, mountain retreats, BMW rentals to even Christmas decorations, it was tempting!

By the end of the night we were exhausted and finally walked in the door right at 12. After my 10.7 mile run and then standing in 4-inch heels for over 5 hours, I was spent. But in a good way, Dan and I both felt awesome and proud to have donated to such a great cause. Find out more about the lowcountry Special Olympics here).

So you can imagine after a solid night of sleep I woke up ready for Sunday! And of course that means, my favorite breakfast!

Vegan Sunday Brunch Recipes

I have been going crazy on breakfast recipes lately. I guess the cool mornings have me craving warm comfort foods.

Of course I started with pancakes, but pancakes with a twist:

Vegan Pumpkin Walnut Pancakes

They were so good!

In a blender or by hand mix together: 

  • 1/2 flaxseed egg (1 tsp flax meal + 3 tsp water)
  • 1/4 cup oats
  • 1/4 cup pumpkin
  • 1/2 tsp pumpkin pie spices
  • 3 drips stevia (or you could use 1 tsp syrup or agave)
  • 1/4 cup almond milk

After blended stir in: 

  • 2 tsp chopped walnuts

Directions: 

  1. Heat up a non-stick skillet on med-high heat and pour in your batter and allow it to cook until edges begin to rise and cook up. Give it a little shake to make sure it isn’t stuck to the pan (I forgot to do this and that’s why mine looks a bit sickly).
  2. Flip and cook for an additional 3-4 minutes.
  3. Top with favorite toppings! Mine is sunflower butter and a drizzle of syrup.

Served with a side of apples and bananas (by the way, this banana came off my dad’s banana tree! It tasted great.)

But I wasn’t done yet, I have been craving flavors of lemon and berries so I set out to make a quick batch of cranberry-lemon scones! Seriously, wow!

Vegan Cranberry Lemon Scones 

Ingredients

  • 1/2 cup vegan yogurt (I used almond milk yogurt)
  • 1 flax egg (1 tbsp flax meal + 3 tbsp water)
  • 1/2 tsp vanilla
  • 5 drops stevia (or you can use 1/2 cup sugar)
  • 1 tbsp coconut oil
  • 1/4 cup water
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp cinnamon
  •  1 cup oats + 2 tbsp
  • 1/2 cup whole wheat flour
  • 1/2 lemon zest
  • 1/2 lemon juiced
  • 1/4 cup cranberries (or other berry)

Directions: 

  1. Preheat oven 350-degrees
  2. In a mixing bowl combine and mix first 6 ingredients. Then add in everything but cranberries and mix well. Fold in cranberries.
  3. On a nonstick cookie sheet, drop down 2 tbsp of batter, and slightly flatten with fingers or back of a spoon.
  4. Bake for 10-12 minutes until slightly golden.
  5. Remove from heat, allow to cool just a little and enjoy with a pumpkin latte or hot tea!

After last weekend’s bed and breakfast trip, I guess I was still feeling the whole breakfast event. These turned out great! The yogurt added a great texture to the scones so they are a bit crunchy on the outside but moist on the inside.
