Love You Much Vegan Apple Torte {Recipe}

Valentine’s Day is right around the corner and I love it! I love the energy that surrounds it and the fun of trying to surprise the one you love.

To be honest, Dan and I don’t really get into it that much, normally it’s a card and a candlelight dinner at home (the weekend after). In fact, we joke that we should just go to the card store together, pick out cards for each other right there and then place them back on the shelves.

I am not one to keep cards, so once I open one and read the inside, I toss it. Is that heartless? Sorry to say, if you’ve ever sent me a card…  I don’t have it.

But those few seconds of opening it up and reading the inside brings me lots of happiness and love!

If you really want to show you love me, just make me something like this:

While the way to a guy’s heart is through his stomach may be true, it’s just as true for a woman!

I made this for Dan this weekend after I was trying to think of something that was not overwhelming on the sweet side (he isn’t into decident desserts) but something that still looked “lovely” and tasted delicious.

And that is how the Love You Much Vegan Apple Torte came to be!

It’s the perfect balance of sweet and lite, with a scoop of coconut whipped cream this thing is awesome.

Love Your Much Vegan Apple Torte

Ingredients: 

2 Apples (Big)

1/4 Cup Granola (I used Nature’s Path)

1/2 Cup Coconut flour*

3/4 Cup Whole wheat flour

1 1/2 Tsp Baking powder

1/3 Cup All-natural apple sauce

1/3 Cup Sugar

3/4 Cup Almond Milk

1/3 Cup Sliced almonds

1 1/2 Tsp Vanilla

1 Tsp Apple pie spice

1 Tbsp Maple syrup

3 Tbsp water**

*If you don’t have coconut flour, use 3/4 cup whole wheat flour (so all together it would be 1.5 cups whole wheat flour).

**Use this only if using coconut flour as the coconut flour tends to absorb a lot of moisture.

Directions: 

1. Preheat oven to 350-degrees.

2. Slice the apples into 1/4 inch thick slices. Use a heart shaped cookie cutter to cut hearts out of the apples. I had two size cutters.

3. Cut a piece of parchment paper to fit in the bottom of a round cake pan. Place in the bottom, and lightly oil.

4. Place apple slices spaced evenly in the pan, sprinkle granola over.

5. In a mixing bowl mix together flours, and baking powder. Add in apple sauce, sugar, milk, vanilla, water (if using coconut flour). Mix until evenly incorporated.

6. Stir in almond slices.

7. Use a spoon to pour batter evenly over the apple slices.

8. Bake for 16-18 minutes, until slightly golden around the edges.

9. You should have no problem flipping the cake out onto a cake plate. Sprinkle a bit of cinnamon on top (or apple pie spices) and drizzle with the maple syrup.

TIP: Best when served hot with a dollop of coconut whipped cream or ice cream!

Of course this is already gone, we shared it with my family, so I am back to the drawing board on what to give Dan for Thursday… I think I might actually surprise him with something other than a card!
