No One Guessed It Was Vegan: Alfredo Sauce

Though we only traveled 30 minutes away, we had just the vacation we needed.

Sleep, relaxation, beach time, and some fitness sprinkled in (more pictures below and at my Instagram page).

Oh, and some kitchen time.

Dan asked if I wanted to cook something vegan for his family, and after seeing how gorgeous our rental kitchen was, I knew I couldn’t pass up the chance.

What’s a gal to make for a nonvegan family? 

I decided to attempt Alfredo. Pasta is always a safe bet!

I love making sauces, and this was no exception. The flavors came together perfectly, and once everyone took their first bite, they were sold:

Vegan food can taste good!

In fact, my mother-in-law and sister-in-law kept trying to guess the ingredients, and kept being shocked when I promised there was NO CHEESE or cream in this.

That’s when you know a meal come out well, when they think it’s the “real deal”.

I added a few clams (not vegan) to the top for our beach vacation feel and to give the plate a wow factor.

I just love the look of clams over a bed of pasta (which was gluten free).

Seriously, try this sauce! Add it to pasta, risotto, whatever! And of course do what ever add ins you would like.

Here, I sautéed some onions and portabellas in olive oil and wine  and added to the top, along with local tomatoes and fresh basil.

Yum!

The BEST Vegan Alfredo Sauce Ever!

Seriously… so good even you’ll be surprised it’s vegan. I may have second guessed myself after tasting it… “wait, did I put parmesan in this?

Ingredients:

  • 1 can cannellini beans, drained and rinsed
  • 1 cup unsalted cashews
  • 1 clove garlic
  • 1/2 cup white wine (I used a pinot grigio)
  • 1 tsp lemon juice
  • Pinch sea salt & pepper
  • Water as needed

Directions:

  1. Add everything EXCEPT water to a blender and blend until smooth.
  2. If it’s too thick, add in water until you reach the desired consistency. Here, I ended up using 1/4 cup water.

That’s it! It really is that easy.

All that’s left is to toss with cooked pasta on a stove top on low heat. Then, serve it up!

Dan’s parents live in Philadelphia so it was wonderful to spend time with them in this amazing how (right next door to the HGTV Dream Home)!

Even with all the relaxing, I still managed to get in a few workouts:

Day 1: 9 mile run

I honestly don’t think I’ve ever seen such a beautiful sunset before. It left me speechless. All of these images are raw, I didn’t do any editing to them except change their size. It truly was this gorgeous out there!

What’s your favorite type of pasta dinner?

I love Alfredo, but nothing compares to a big bowl of spaghetti! My grandmother’s secret family recipe of chicken spaghetti will likely always be #1.
